Technical question about EF-2000 Typhoon

Very interested to understand how exactly Typhoon's air braking system works on landing roll.

I see the canards fully down, elevons fully up. I caught a glimpse of a pilot and his hands were off the controls. 

Anybody know more about that? Some special regime of the plane?

Any additional info would be helpful. Preferably from Typhoon pilots or technicians.
